Aktivitas Antibakteri dan Uji Antioksidan, serta Identifikasi Molekuler Isolat Bakteri Asam Laktat (BAL) dari Inasua
ABSTRAK
Antibiotik adalah zat yang dapat menghambat pertumbuhan atau bahkan
mematikan bakteri. Penggunaan agen biologi berupa mikroba yang memiliki
aktivitas antibakteri adalah salah satu hal yang penting untuk dikaji. Bakteri Asam
Laktat (BAL) adalah salah satu bakteri hasil fermentasi Inasua. Bakteri Asam
Laktat (BAL) memroduksi senyawa antibiotik dan hidrogen peroksida (jika terjadi
kelebihan oksigen pada lingkungan sekitar) yang bersifat antibakteri. Beberapa
peptida yang dihasilkan dari proses perombakan protein BAL mempunyai sifat
sebagai antioksidan. Penelitian ini bertujuan untuk mengetahui aktivitas antibakteri
isolat Bakteri Asam Laktat (BAL) dari Inasua terhadap pertumbuhan bakteri
Listeria monocytogenes dan Vibrio parahaemolyticus. Hasilnya menunjukkan 1
isolat yaitu isolat N8 yang memiliki aktivitas antibakteri yang menghambat
pertumbuhan Listeria monocytogenes. Vibrio parahaemolyticus tidak
menunjukkan aktivitas antibakteri. Hasil uji antioksidan menunjukkan bakteri tidak
memiliki senyawa antioksidan. Isolat BAL yang memiliki aktivitas antibakteri
kemudian diidentifikasi secara molekuler untuk diketahui spesiesnya. Hasil
identifikasi molekuler menunjukkan homologi 96% dengan Brevundimonas
meditteranea yang menunjukkan bahwa spesies isolat BAL yang diperoleh berbeda
spesies dengan hasil BLAST.

ABSTRACT
Antibiotics are substances that can inhibit growth or even inactivate bacteria. The
use of biological agents in the form of microbes with antibacterial activity is one of
the important things to study. Lactic Acid Bacteria (LAB) is one of the bacteria
produced by Inasua fermentation. Lactic acid bacteria (LAB) produce antibiotic
compounds and hydrogen peroxide (if there is an excess of oxygen in the
surrounding environment) which is antibacterial. Some of the peptides produced
from the BAL protein reformation process have antioxidant properties. This study
aims to determine antibacterial activity of Lactic Acid Bacteria (LAB) isolates from
Inasua to the growth of Listeria monocytogenes and Vibrio parahaemolyticus
bacteria. The results showed that 1 isolate, which is N8 isolate has antibacterial
activity which inhibits the growth of Listeria monocytogenes. Vibrio
parahaemolyticus does not show antibacterial activity. Antioxidant test results
show that bacteria do not have antioxidant compounds. LAB isolates that have
antibacterial activity are then identified molecularly for known species. The results
of molecular identification showed 96% homology with Brevundimonas
meditteranea which show that N8 isolate have different species with BLAST result.
